I was going for a sandwich that kind of replicated the ever popular, ever delicious Popeye’s Chicken Sandwich… but still kept the carbs low. I think this recipe is a great copycat, and I hope you love it!
Keto Copycat Popeye’s Chicken Sandwich
I love a chicken sandwich as much as the next person, but there are a few things that separate a good chicken sandwich from one that’s just okay.
Flavor – The flavor of the chicken itself has to be on point. Then the seasoning will just bring it over the top. That’s why in this recipe we use the juicy and flavorful chicken thigh, season the chicken AND add some seasoning to the breading.
Crunch – A good fried chicken always has a crunchiness to it, keto or not. In this recipe, there’s no exception. The air fryer helps you get that delicious crunch without all the extra oil, mess and time commitment of deep frying.
Bun – I’m all for going bunless and crustless since following a keto diet, but sometimes you just want the taste and feel of something more traditional. And that’s still achievable with a keto chicken sandwich.
Low Carb Buns
There are great keto bun recipes all over the internet, including these low carb air fryer buns, if you’re looking for something you can make yourself with “cleaner” and more strict ingredients.
But for this sandwich I opted for the pre-made Sola Wheat Hamburger Buns.
At only 6g net carbs, these Sola Buns were perfect for me and the way I choose to do a keto diet.
Remember, everyone’s diet looks different and what works for one person might not be the best for another.

- Low Carb Bun, if desired
- After creating air fryer fried chicken, spread mayonnaise and place pickles on a low carb bun. Top with chicken and any additional desired condiments.
