What is a Jicama?
Even though they're gaining popularity, you may not have heard of jicama.
It's a lower carb root vegetable that has also been referred to as a "mexican potato." It's firm and potato-like, but it has a sweeter flavor and you can eat it raw for a crunchy snack.
Nowadays you can find jicama just about anywhere, from your local grocery store to Walmart. When making this recipe, I prefer to buy jicama sticks. With these, all the work is done for you...the jicama is peeled and sliced, and it's still affordable!
Jicama Fries are probably one of the top french-fry replacements for people following a low carb diet. And there's a good reason for that!
By comparison, a 369 gram potato has 56 grams of net carbs while a 365 gram jicama only has 14 grams of net carbs. It's definitely a smart swap.

This recipe is pretty simple, and what's even better about it is you can customize it for your favorite flavor profile. The possibilities are endless!
For this recipe you'll only need:
- Jicama (peeled and sliced)
- Olive Oil
- Seasoning Salt
- Grated Parmesan
- Garlic Powder
Are jicama fries really keto friendly?
Everybody's keto journey is different, and there are some foods you may allow yourself while others might just be too tasty and tempting to help you practice good self-control.
To be fair to everyone, I'd say jicama fries fall more into the "low carb" rather than "strict keto" category, largely because many people following a keto diet keep their net carb to under 20g a day, and this side dish alone would run you about 15...that is, if you're able to just eat one serving.
You can totally make this work with keto macros, but if you're someone looking to stay in ketosis and you can't put the fries down, it might be better to just avoid this recipe.

Air Fryer Jicama Fries
Air Fryer Jicama Fries are an easy way to achieve a crispy, low carb french fry substitute to support any keto-friendly lifestyle!
Ingredients
- 1 medium Jicama
- 2 tabespoons olive oil
- 1/2 teaspoon seasoning salt
- 2 tablespoons grated parmesan
- 1/2 teaspoon garlic powder
Instructions
Peel and slice jicama into 1/4 inch thick slices.
Boil jicama slices in salted water for 5-6 minutes.
Carefully strain water from jicama slices, and pat slices dry with paper town to remove excess moisture.
In a large bowl, toss jicama fries with olive oil and seasonings.
When well coated, transfer jicama fries to air fryer basket. Be sure to not overcrow the basket, and keep fries to one layer.
Set temperature to 400 degrees fahrenheit and set time for 15 minutes.
Every 5 minutes, check on the fries and give the basket a shake to ensure even coating.
Allow to cool before serving.
