The easy secret ingredient to achieving a copycat Chipotle meal is Chipotle Adobo sauce, also known as Chipotle Peppers in Adobo Sauce. It comes in a small, 7-ounce can, and is easily found at any grocery store.

It couldn't be easier. You just marinate the chicken in the Chipotle Adobo sauce and place it in your air fryer. 

You'll want to go for chicken thighs because they're loaded with flavor. If you're following a low carb, high fat diet like keto, the fatty thighs will also help you hit your macros and keep you full. 

The only ingredients you'll need to make a Copycat Chipotle Burrito Bowl just like mine are:

Chicken Thighs
Chipotle Adobo Sauce
Chopped Romaine Lettuce
Shredded Monterry Jack Cheese
Pico de Gallo
Sour Cream
Guacamole

And from that point, if you're not low carb you can add your beans and rice, but as is, this is a great low carb option.

Ingredients

  • 1 lb Boneless Skinless Chicken Thighs
  • 1/4 Cup Chipotle Adobo Sauce
  • 6 Cups Chopped Romaine Lettuce
  • 1 Cup Monterrey Jack Cheese
  • 1/2 Cup Pico De Gallo
  • 1/2 Cup Guacamole
  • 1/2 Cup Sour Cream

Instructions

  1. Marinate chicken thighs in chipotle adobo sauce for 2-4 hours.
  2. Set air fryer to 400 degrees Fahrenheit and 20 minutes. Halfway through, use tongs to flip chicken. Make sure chicken reaches an internal temperature of at least 165 degrees Fahrenheit before removing.
  3. Remove chicken from air fryer and let rest for at least 5 minutes. Cut chicken into small pieces.
  4. Assemble burrito bowl with lettuce, chicken, pico de gallo, cheese, guacamole, sour cream, and any other desired toppings.
