We love our air fryer because it makes life so much easier. Between reducing the cook time and cutting down on appliances that we need, it's pretty much the hero of our kitchen.
But even better than the convenience of the speed of the air fryer is when you have a recipe that allows you to toss everything into one basket with minimal prep work and still come out with something yummy.
And that's what we have today!

Chicken fajitas in the air fryer
Making chicken fajitas in your air fryer is super simple. All you need to do is toss the sliced chicken breasts in with some oil, fajita seasoning, sliced yellow onion, and sliced red and green bell peppers. That's it!
What about queso?
If you're like me, chicken fajitas are not complete without a delicious white queso. Of course you could opt for a store-bought variety, but a quick, homemade cheese sauce will get you closer to restaurant quality.
All you need to make a delicious white queso is: butter, cream cheese, heavy cream, monterey jack cheese and white american cheese.
White american cheese is what gives this queso that real restaurant style flavor we all love so i wouldn't recommend replacing it. The monterey jack is great for consistency but has a mild flavor so that alone will not make a great sauce.
This keto cheese sauce recipe is my go to so I simply adapted it with the difference cheeses.
To make this low carb white queso you melt 2 tablespoons of butter in a sauce pan over medium heat.
Pour in 1/2 cup of heavy whipping cream and then whisk in 1 ounce of softened cream cheese. Whisk until starting to bubble and all ingredients are smooth, about 1 minute. Reduce heat to low.
Turn of the heat then whisk in 1/2 cup of shredded monterey jack and 8 ounces of cubed white american. I haven't seen this cheese come pre-shredded so you'll likely have slices to work with which is fine.
Whisk the sauce until smooth, about 1 minute. Then remove from heat and serve.
It will start to set when it gets cool but you can simply warm it up again in the microwave for 10-15 seconds until pourable.

Traditionally, fajitas are served in tortillas and I'm guessing that's the flavor you're going for. If you're following a low carb diet, the good news is there are an increasing number of low carb tortilla options to satisfy that craving.
My absolute favorite low carb tortilla is Mama Lupe's Low Carb Tortillas. They're only 3 grams of net carbs per tortilla and super delicious. They're literally always my go-to, so I highly recommend them.
You don't HAVE to eat these chicken fajitas in tortillas though, feel free to enjoy them with a bowl of Mexican style cauliflower rice or just on their own with some delicious queso! Any way you choose to enjoy your fajitas will be very tasty!

Ingredients
- 1 pound boneless skinless chicken breast, sliced into 1/2 inch slices
- 1 red bell pepper, sliced 1/4 inch slices
- 1 green bell pepper, sliced 1/4 inch slices
- 1/2 yellow onion, sliced 1/4 inch slices
- 2 tablespoons olive oil
- 1 packet fajita seasoning
Instructions
- Preheat the air fryer to 375 degrees.
- Place the chicken, peppers, onion slices, and olive oil in a large bowl then toss to coat.
- Sprinkle the fajita seasoning into the bowl and toss to coat evenly.
- Place all the ingredients into the air fryer basket. Cook 10-12 minutes, shaking the basket 2-3 times during cooking. Vegetables will be tender crisp and chicken should be an internal temeprature of at least 165 degrees when done.
- Serve warm with choice of toppings such as sour cream, guacamole or a squeeze of lime juice.
